A Healthier Version of Marie's Easy Slow Cooker Pot Roast

3 pounds chuck roast

1 cup reduced-sodium beef stock

2 onions, chopped

2 pounds potatoes, peeled and cubed

3 carrots, chopped

1 stalk celery, chopped

¼ cup chopped fresh parsley (Optional)
Cooking Instructions

Season the chuck roast with salt and pepper.

Heat a large skillet over medium-high heat and brown the roast on all sides, about 4 minutes per side. Transfer the roast to the slow cooker. Pour beef stock into the skillet, bring to a boil, and scrape up the browned bits from the pan using a wooden spoon. Pour the broth and onions into the slow cooker, cover, and cook on Low for 5 hours.

Add potatoes, carrots, celery, and parsley. Cover and continue cooking on Low for an additional 3 hours, or until the roast is tender and fully cooked.
