Acorn Squash Stuffed with Wild Rice

2 acorn squash, halved and seeded

1 (6 ounce) package dry corn bread stuffing mix

2 teaspoons butter

1 onion, diced

1 clove garlic, minced

1 cup chopped fresh mushrooms

1 cup long grain and wild rice mix

2 sprigs fresh sage, chopped

2 cups vegetable stock
Instructions

Preheat the oven to 350°F (175°C). Lightly grease two baking pans, and place the squash halves, cut side down, into the pans. Bake for about 25 minutes, or until just tender to the touch.

Prepare the stuffing mix according to package directions, then set aside.

In a saucepan, melt the butter over medium heat. Sauté the onion and garlic until the onion becomes translucent, about 10 minutes. Add the mushrooms and cook, stirring, until they release their moisture, about 5 minutes. Stir in the rice mix and sage, and cook, stirring, until the vegetables start to brown, about 5 minutes. Add the vegetable broth, stir to combine, cover, and reduce the heat. Let the rice mixture simmer for 30 to 40 minutes, or until tender.

Gently mix the cooked rice mixture with the prepared stuffing in a bowl. Spoon the stuffing into the center of each squash half without pressing it down. Return the stuffed squash to the oven and bake for an additional 15 minutes, or until the squash is fully tender and the stuffing is hot.
