Algerian Kefta: Flavorful Meatballs

1 pound lean ground beef

4 cloves garlic, minced, divided

¼ cup finely chopped onion, divided

salt and pepper to taste

3 roma (plum) tomatoes, diced

1 teaspoon dried parsley

½ teaspoon ras el hanout (Optional)

½ cup water
Instructions
In a bowl, combine the ground beef with half of the minced garlic and a tablespoon of finely chopped onion. Use your hands to blend everything until well mixed. Form the mixture into 12 to 14 oval-shaped patties, each about 1 1/2 inches long.
Heat a skillet over medium-high heat. Cook the patties in batches, browning them on both sides and ensuring they are cooked through with no pink in the center, about 10 minutes. Transfer the meatballs to a rimmed serving dish and continue with the remaining patties.
Lower the heat to medium and add the remaining chopped onion. Season with salt and pepper. Sauté the onions in the drippings, stirring frequently, until they become soft and translucent, around 5 minutes. Add the remaining garlic and cook for another 30 seconds.
Add the roma tomatoes, dried parsley, ras el hanout, and water to the pan. Cook for about 5 minutes, or until the tomatoes are tender. Pour the tomato mixture over the meatballs and serve.
Editor's Notes
Halal beef is prepared in accordance with religious guidelines, similar to Kosher beef. Regular ground beef can also be used as a substitute in this recipe.
