Instructions
Begin by preheating your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish and line it with parchment paper, ensuring it extends up the sides. Flip the parchment so the greased side faces upward.
Combine ground lamb and beef in a large bowl. Add chopped onions, minced garlic, rosemary, oregano, salt, pepper, cumin, paprika, cinnamon, cayenne pepper, and breadcrumbs. Mix thoroughly until everything is well incorporated. Transfer the mixture to the prepared baking dish, pressing it down firmly into an even layer that reaches the edges. The meat should be compact and dense.
Bake in the preheated oven for 40 to 45 minutes, or until the surface is golden brown. Use an instant-read thermometer to check the internal temperature, which should read at least 160°F (70°C). Let the meat cool to room temperature, then transfer it to a plate. Cover with plastic wrap and refrigerate for 1 to 2 hours until fully chilled.
Move the meat to a cutting board and slice it into 3 sections crosswise. Cut each section into thin slices, about 1/8-inch thick, as needed.
Heat oil in a skillet over medium-high heat. Brown the slices on each side, cooking for about 2 minutes per side until crispy and golden.
