Amish-Style Beef and Noodles

2 1/2 pounds beef chuck, cut into 2-inch cubes

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper, plus more for the top

1 tablespoon vegetable oil

2 large yellow onions, sliced

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1 rounded tablespoon beef bouillon paste

8 cups beef broth, divided

12 ounces large egg noodles

sliced green onions for garnish (optional)
Instructions
Coat the beef with salt and pepper, making sure it's evenly seasoned.
Heat vegetable oil in a Dutch oven over high heat. Brown the beef thoroughly on both sides, cooking in batches if necessary, then transfer to a bowl. Turn off the heat.
Add butter to the Dutch oven along with onions and a pinch of salt. Set the heat to medium-high and cook, stirring occasionally, until the onions turn golden, about 5 minutes.
Stir in the flour and cook for an additional 2 minutes. Add garlic powder, beef base, and beef broth. Mix well and wait for the broth to come to a boil. Return the browned beef to the pot.
Stir the mixture, cover the pot, and reduce the heat to low. Let it simmer for about 2 hours, or until the meat becomes very tender.
Use a strainer to remove the beef and set it aside. Bring the broth to a boil over high heat, then add the noodles. Cook, stirring, until the noodles are nearly tender, about 30-60 seconds less than the package instructions. Stir in the reserved beef and reduce the heat to low.
Once the noodles are tender and the beef is warmed through, taste the dish and adjust the seasoning as needed. Serve immediately, garnished with additional freshly ground black pepper and chopped green onions.
