Amish-Style Meatloaf

2 pounds ground beef

2 ½ cups crushed buttery round crackers

1 ¾ cups ketchup, divided

1 small onion, chopped

3/4 cup brown sugar, divided

2 eggs

2 strips bacon

2 tablespoons vinegar

2 tablespoons prepared yellow mustard

¾ teaspoon salt, or to taste
Instructions

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine ground beef, crushed crackers, 3/4 cup ketchup, diced onion, 1/4 cup brown sugar, and eggs. Mix well. Press the mixture into a 9x5-inch loaf pan and lay slices of bacon over the top.

Bake for about 1 hour, or until the meatloaf is fully cooked. While the loaf bakes, mix the remaining 1 cup ketchup, 1/2 cup brown sugar, vinegar, mustard, and salt in a bowl. During the last 15 minutes of baking, spread the glaze over the meatloaf.
