Apple Cider-Glazed Pork Chops

¼ cup apple cider vinegar

Cooking Instructions
Season the pork chops with a generous sprinkle of salt and freshly cracked black pepper.
Heat a combination of oil and butter in a heavy skillet over medium-high heat. Cook the pork chops in the hot mixture until they are golden brown on both sides, and the pork is slightly pink in the center, about 5 to 7 minutes per side. Use an instant-read thermometer to ensure the pork reaches at least 145°F (63°C). Remove the skillet from heat and transfer the pork chops to a plate.
Add garlic to the skillet and cook over medium-high heat, stirring for about 30 seconds. Pour in the vinegar and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Add the apple cider and Dijon mustard, bring the mixture to a boil, and let it cook for 3 to 4 minutes, until the sauce thickens and reduces. Stir in rosemary and red pepper flakes, then season with salt and black pepper to taste.
Return the pork chops to the skillet to warm through, cooking for 1 to 2 minutes per side.
