Atlantic-Canadian Goulash

3 cups uncooked elbow macaroni

1 tablespoon olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 small green bell pepper, finely chopped

1 (12 ounce) can corned beef

1 (10.75 ounce) can condensed tomato soup

⅓ cup ketchup

salt and ground black pepper to taste

1 cup freshly shredded Parmesan cheese
Cooking Instructions

Start by bringing a large pot of lightly salted water to a boil over high heat. Once boiling, add the macaroni and allow it to cook uncovered, stirring occasionally, until it's tender but still firm, about 8 minutes. Drain the pasta in a colander.

In a large pot, heat olive oil over medium heat and sauté the onion and garlic until the onion becomes soft, about 5 minutes. Add the green pepper and cook until it softens, about 8 more minutes. Stir in the corned beef and simmer until heated through. Add the tomato soup, ketchup, cooked macaroni, salt, and black pepper, and stir everything together. Let the mixture simmer on low heat. Top with Parmesan cheese and serve hot.
