Step-by-Step Instructions
Begin by preheating your oven to 400°F (200°C).
Arrange the sweet potatoes on a baking sheet. Use a knife to poke small holes in each potato and drizzle with olive oil, then rub to coat evenly. Space the potatoes apart on the sheet.
Roast in the preheated oven until completely tender, around 35 minutes.
While the potatoes bake, add bacon to a pan over medium heat. Cook, stirring occasionally, until the bacon crisps up and the fat becomes frothy, about 4 to 5 minutes. Stir in the green onions and jalapeño; cook for an additional minute. Remove from heat and set aside.
Once the sweet potatoes are cool enough to handle, leave the oven on. Cut off the top third of each potato at a 45-degree angle. Scoop out the flesh from both halves, leaving about a 1/4-inch border to form the potato shells.
Season the mashed sweet potato with salt, pepper, and a dash of cayenne. Stir in 1/2 cup of cheese, crème fraîche, and a squeeze of lime juice. Mash everything together until smooth. Mix in the bacon and green onion blend, then spoon the filling into the potato shells. Top with the remaining cheese and return to the oven.
Bake until the potatoes are fully heated and the tops have turned golden brown, about 20 to 25 minutes.

It's recommended to choose sweet potatoes of similar size (girth) rather than focusing on their length for more even cooking.
Feel free to replace the crème fraîche with sour cream or regular heavy cream, if preferred.
