Bacon-Infused Roasted Chicken

1 (4 pound) whole chicken

1 teaspoon dried thyme

2 carrots, cut in chunks

paprika to taste

8 slices bacon

2 cups beef broth
Instructions

Preheat your oven to 450°F (220°C).

Rub the chicken with butter, then season with salt, pepper, and thyme. Stuff the cavity with carrots and tie the legs together. Place the chicken, breast side up, in a roasting pan. Lay bacon strips over the top and secure with toothpicks. Sprinkle with paprika. Pour beef broth into the pan, avoiding the bacon.

Roast the chicken for 15 minutes, then lower the temperature to 350°F (175°C). Baste with the broth every 15 minutes. Continue roasting for 1 hour 15 minutes or until the internal temperature reaches 180°F (82°C) at the thickest part of the thigh.

Remove the bacon and discard the toothpicks. Roast the chicken for an additional 15 minutes to crisp the skin. Transfer to a platter, remove the ties, and serve. The bacon is edible, but it’s best to discard the carrots.
