Bacon-Wrapped Savory Venison Meatloaf

1 pound ground venison

½ yellow onion, chopped

1 cup barbecue sauce, divided

1 (4 ounce) packet saltine crackers, finely crushed

Preheat the oven to 350°F (175°C).

In a large bowl, combine venison, onion, 1/4 cup of barbecue sauce, egg, crushed crackers, 2 tablespoons of brown sugar, 2 tablespoons of Worcestershire sauce, sage, and steak seasoning. Mix thoroughly with your hands until the ingredients are well incorporated. Transfer the mixture into a 3x7-inch loaf pan and cover with bacon slices.

Bake in the preheated oven for about 35 minutes, or until the meatloaf is no longer pink in the center and the bacon is crispy. Use an instant-read thermometer to check that the internal temperature reaches 160°F (70°C).

While the meatloaf bakes, prepare the sauce by combining the remaining 3/4 cup of barbecue sauce, 2 tablespoons of brown sugar, and 1 tablespoon of Worcestershire sauce in a small saucepan over medium heat. Stir constantly and simmer for about 5 minutes until the sauce is warmed through and slightly thickened.

Once the meatloaf is done, pour the prepared sauce over the top and let the meatloaf rest for 5 minutes before serving.
