½ cup yellow cornmeal

1 ½ pounds catfish fillets

½ cup skim milk

cooking spray
Cooking Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with foil and lightly coat with cooking spray.

In a shallow dish, mix together cornmeal, paprika, thyme, salt, celery seed, onion powder, garlic powder, and black pepper. Dip each catfish fillet into milk, then coat generously with the cornmeal mixture. Place the fillets on the prepared baking sheet, and spray the tops with cooking spray.

Bake in the preheated oven for about 15 minutes, or until the fillets easily flake when tested with a fork.
