Baked Cod with Lemon, Garlic, and Chives

4 (6 ounce) cod fillets

4 teaspoons olive oil

salt and ground black pepper to taste

1 bunch fresh chives, coarsely chopped

2 lemons, sliced

2 cloves garlic, sliced
Instructions

Preheat the oven to 400°F (200°C).

Tear off 4 large pieces of heavy-duty aluminum foil. Brush each cod fillet with olive oil, then season with salt and pepper. Place each fillet in the center of the foil and arrange lemon slices along the top. Sprinkle chopped garlic and chives on top of the lemon, then fold the foil around the fish, sealing the edges by folding them 2 or 3 times to create packets.

Place the foil packets in the oven and bake for 15-20 minutes, or until the fish is fully cooked and flakes easily with a fork.
