Barbeque Tempeh Sandwiches

Ingredients

1 cup barbecue sauce, your choice

1 (8 ounce) package tempeh, crumbled

1 tablespoon vegetable oil

1 red bell pepper, seeded and chopped

1 green bell pepper, seeded and chopped

1 medium onion, chopped

4 kaiser rolls, split and toasted
Instructions

In a medium bowl, pour in the barbeque sauce. Crumble the tempeh into the sauce and allow it to marinate for about 10 minutes.

Heat oil in a skillet over medium heat. Add the sliced red and green peppers, along with the onion. Cook, stirring often, until the vegetables are soft. Add the marinated tempeh and sauce, heating it through.

Once heated, scoop the tempeh mixture onto fresh kaiser rolls and serve.
