BBQ Grilled Meatloaf Delight

1 ½ pounds ground beef

1 ½ pounds ground pork

2 cups dry bread crumbs

1 cup finely chopped sweet onion (such as Vidalia®)

1 egg, beaten

1 teaspoon Worcestershire sauce

1 teaspoon minced garlic

1 teaspoon dried tarragon

1 teaspoon sea salt

1 teaspoon ground black pepper

½ cup barbeque sauce

½ cup ketchup
Cooking Instructions

Preheat your grill to medium heat and clean the grates. Lightly coat the grates with nonstick spray.

In a large bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, egg, Worcestershire sauce, minced garlic, tarragon, sea salt, and black pepper. Divide the mixture into two equal portions and shape into 4-inch diameter, 6-inch long loaves. In a small bowl, mix barbecue sauce and ketchup until smooth.

Place the meatloafs directly on the grill, brushing each with about 3 tablespoons of the barbecue sauce mixture. Grill until the internal temperature reaches at least 160°F (73°C), which will take about 1 hour.
Oven Instructions:
Preheat your oven to 350°F (175°C). Lightly grease a baking dish or line it with greased aluminum foil. Shape the mixture into one large meatloaf (or, for quicker cooking, divide it into two smaller loaves). Bake in the preheated oven for 45 minutes. Once done, remove from the oven, drain any excess fat, and brush with BBQ sauce. Return to the oven and bake for an additional 20 minutes, or until fully cooked. The internal temperature should reach 160°F (70°C) when tested with an instant-read thermometer.
Tip from the Cook
Since 3 pounds of meat is often too much for just the two of us, I usually divide the recipe in half. I keep all other ingredient amounts the same, though.
