BBQ Oatmeal Meatloaf

2 pounds ground beef

¾ pound mild sage-flavored breakfast sausage

1 onion, chopped

2 carrots, shredded

5 tablespoons dry onion soup mix

2 tablespoons brown sugar

3 eggs

1 ½ cups barbeque sauce

1 cup rolled oats, or more if desired

6 slices bacon, divided
Instructions

Preheat your oven to 375°F (190°C).

In a large bowl, combine ground beef, sausage, diced onions, grated carrots, onion soup mix, brown sugar, eggs, and BBQ sauce. Mix well until evenly combined. Gradually add oats, stirring until the mixture holds together. You can use up to 2 cups of oats for the right texture. Divide the mixture in half and place each half into a 9x5-inch loaf pan. Top each loaf with 3 strips of bacon placed lengthwise.

Bake in the preheated oven for about 1 hour, or until the meatloaf is cooked through and the juices run clear.
Chef's Tip:
I usually remove the bacon once it’s done and use it to enhance side dishes like green beans, creamed corn, or cabbage.
