Beef Lo Mein Noodles

1 (8 ounce) package spaghetti

1 teaspoon dark sesame oil

1 tablespoon peanut oil

4 cloves garlic, minced

1 tablespoon minced fresh ginger root

4 cups mixed vegetables

1 pound flank steak, thinly sliced

3 tablespoons reduced-sodium soy sauce

2 tablespoons brown sugar

1 tablespoon oyster sauce

1 tablespoon Asian chile paste with garlic
Instructions

Bring a large pot of salted water to a boil. Add the spaghetti and cook for about 12 minutes, or until al dente. Drain and transfer to a large mixing bowl. Drizzle with sesame oil and toss to coat. Cover the bowl with a plate to keep the noodles warm.

Heat peanut oil in a wok or large skillet over medium-high heat. Add the garlic and ginger, stir-frying for 30 seconds until fragrant. Add the mixed vegetables and cook for about 3 minutes until just tender. Stir in the flank steak and cook for another 5 minutes until the beef is fully cooked.

In a small bowl, combine soy sauce, brown sugar, oyster sauce, and chili paste. Pour the sauce over the cooked spaghetti. Transfer the spaghetti and sauce into the wok with the beef and vegetables; stir-fry for 2-3 minutes until heated through.
Chef’s Tips
I included a small package of sliced mushrooms along with a mix of shredded broccoli, carrots, cabbage (coleslaw mix), and snap peas. However, feel free to add any vegetables you prefer. Around 4 to 5 cups of vegetables is a great amount to use.
