One-Pan Beef Stroganoff Noodles – A Classic Made Easy
Growing up during the heyday of processed foods, my mom often turned to pre-packaged meals, but when it came to pasta in a meaty sauce, she never relied on shortcuts. While we did occasionally indulge in boxed mac and cheese or pop-tarts, most of our meals—like this beef stroganoff with noodles—were homemade from scratch.
Hamburger Helper, a quick and easy dinner many families relied on, was something we never used. We had our own take on it, and I’m sharing this simpler version of ground beef stroganoff noodles as a tribute to that idea of a fast, satisfying, one-pan dish with hearty meat and noodles in a creamy sauce.
The main challenge in this recipe is cooking the egg noodles, which come in different shapes and sizes. Just follow my cooking times as a guide, but keep an eye on them, stir occasionally, and add liquid if necessary until they're just right. Once the noodles are cooked through, stir in the sour cream, and you’re ready to eat. Be careful not to add the sour cream too early, as it can split if it simmers too long. 1 cup thinly sliced mushrooms

1 teaspoon salt, plus more to taste

½ cup diced onion

1 pound ground beef

2 cloves minced garlic

1 ⅓ tablespoons flour

2 tablespoons vodka (Optional)

2 ½ cups beef broth, or as needed

1 cup water

2 ½ cups egg noodles

½ cup sour cream, plus more for serving

2 tablespoons fresh sliced chives or green onions
Instructions
Prepare all the ingredients.

Heat butter and oil in a skillet over medium-high heat. Add the mushrooms, season with salt, and cook, stirring occasionally, until they are golden brown, about 5 to 10 minutes.

Add the onion and ground beef to the skillet. Cook, stirring occasionally, until the beef is browned and crumbled, and the onions become soft and translucent, about 5 minutes. Season with black pepper and a pinch of cayenne.

Mix in the minced garlic and flour, then cook for an additional minute.

Pour the vodka into the skillet and let it cook off, about 30 seconds.

Add the beef broth and water, then bring the mixture to a simmer. Cook, stirring occasionally, for 10 minutes.

Lower the heat to medium and stir in the noodles. Cover tightly and let it simmer for 5 minutes. Uncover, stir well, then cover again and cook until the noodles are just tender, about 3 more minutes. (See Cook's Note.)

Once the noodles are cooked, reduce the heat to low and stir in the sour cream.

Serve immediately with extra sour cream and a sprinkle of green onions or chives, if desired.

Recipe Tip
Cooking time may vary depending on the brand and shape of the egg noodles you use. If the pan becomes too dry before the noodles are fully cooked, simply add more broth.
