4 cups okra, cut into 1-inch pieces

1 tablespoon olive oil

1 teaspoon cumin seeds

1 onion, chopped

2 tomatoes, diced

1 teaspoon curry powder

1 teaspoon salt
Cooking Instructions

Place the okra in a large microwave-safe dish and microwave on High for 6 minutes.

Heat olive oil and cumin seeds in a large skillet over medium heat until the seeds swell and turn golden brown. Add onions and sauté for 3 minutes. Stir in the tomatoes and cook for an additional 3 minutes. Add the microwaved okra to the pan, followed by curry powder and salt. Stir and cook for 3 more minutes until everything is well heated. Serve hot.
