Big V's Tender Slow-Cooked Pulled Pork

1 (12 fluid ounce) can or bottle beer

¼ cup mustard, or to taste

¼ cup honey

2 tablespoons Worcestershire sauce

2 tablespoons crushed garlic, or to taste

1 teaspoon cayenne pepper

1 teaspoon salt

3 pounds pork picnic roast

¾ cup water (Optional)

1 onion, chopped
Instructions

In a bowl, combine beer, mustard, honey, Worcestershire sauce, garlic, cayenne pepper, and salt, mixing until the honey dissolves. Pour a small portion of the marinade into a slow cooker and add the pork. Pour the remaining marinade over the pork. Cover and refrigerate overnight, turning the pork occasionally.

Set the slow cooker to Low and cook the pork for 8 hours, occasionally basting. If the pork dries out, add some water. After 8 hours, add onion around the pork and continue to cook for another 2 hours, until the pork is tender and easily pulled apart.

Shred the pork with two forks, discarding any fat. Transfer the pulled pork to a serving dish. Strain the onions from the slow cooker and add them to the shredded pork.

If you're freezing the pork roast, make sure to thaw it in the refrigerator before use.
For optimal flavor, start marinating the roast the night before you plan to serve it. Unless you're aiming for a leaner dish, keep the fat on the roast—this will enhance the flavor and help keep the meat juicy and tender during cooking.
