Boiled and Roasted Ribs

1 (2 pound) slab baby back ribs, cut into individual ribs
Glaze Ingredients:

1 ½ tablespoons soy sauce

1 ½ tablespoons rice vinegar

1 ½ tablespoons sambal oelek chili paste

1 ½ tablespoons Dijon mustard

1 ½ tablespoons ketchup
-
1 ½ tablespoons honey
-
1 ½ tablespoons brown sugar

½ teaspoon Chinese five-spice powder
Instructions
Prepare the ingredients.
Prepare the broth: In a large pot, combine 2 1/2 quarts of water, rice vinegar, onion, garlic, salt, five-spice powder, chili flakes, and bay leaves. Bring to a boil, then lower the heat and simmer for 15 to 20 minutes.
Add the ribs to the simmering broth. Bring back to a simmer, then reduce heat to low and cook for 1 hour.
Preheat the oven to 375°F (190°C). Line a baking sheet with a silicone baking mat.
Prepare the glaze: In a large bowl, whisk together soy sauce, rice vinegar, chili paste, mustard, ketchup, honey, brown sugar, and five-spice powder.
Remove the ribs from the broth and place them in the bowl with the soy sauce glaze. Toss to coat the ribs evenly.
Transfer the glazed ribs to the prepared baking sheet. Set aside any remaining glaze for brushing later.
Bake the ribs in the preheated oven for 15 minutes. Flip the ribs and brush with additional glaze. Continue baking for another 15 to 20 minutes, brushing occasionally with the reserved glaze if desired. Remove from the oven and serve.
