1 (3 pound) rack of whole beef ribs (not short ribs)

2 tablespoons sea salt, or more if needed
Cooking Instructions

Preheat your oven to 275°F (135°C).

Position the ribs with the membrane side up. Using a sharp knife, carefully remove the membrane in one piece, if possible. Discard the membrane. Generously rub both sides of the ribs with salt. Place the ribs on a roasting rack inside a pan.

Roast in the oven for 1 1/2 hours. Periodically baste the ribs with a little water, being cautious not to disturb the salt coating. Continue roasting, basting every 45 minutes to an hour, until the meat becomes tender and easily pulls away from the bone. This should take about 6 hours in total.

Once done, remove the ribs from the oven and let them rest for 10 to 15 minutes before slicing into three portions.
Helpful Tips
If you prefer not to remove the membrane yourself, ask your butcher to do it for you.
When basting, be careful not to wash off the salt. Resist the urge to overdo it and apply the water sparingly.
