Briam: Greek Baked Zucchini and Potatoes Dish

Arrange the potatoes, zucchini, and red onions in a large baking dish (9x13-inch or larger, or divide into two dishes).

Top the vegetables with pureed tomatoes, olive oil, and parsley, then season generously with sea salt and pepper. Toss everything to ensure the vegetables are well coated.

Place in the preheated oven and bake for 1 hour. Stir gently, then bake for an additional 30 minutes or until the vegetables are tender and the liquid has evaporated.
