Carne Asada Tacos Recipe

1 ½ pounds boneless beef top sirloin, cut into thin bite-size slices

1 (28 ounce) can tomatillos

2 fresh jalapeno peppers, seeded

4 tablespoons canola oil, divided

1 (10.5 ounce) can beef broth

12 (6 inch) corn tortillas

½ large onion, chopped

2 tomatoes, chopped

1 avocado - peeled, pitted and sliced

1 bunch fresh cilantro, chopped

1 lemon
Cooking Instructions

Place the sliced beef in a shallow bowl, season it with salt, black pepper, and crushed red pepper. Squeeze fresh lime juice over the meat and toss to coat evenly. Cover and refrigerate for 30 minutes.

In a blender or food processor, blend together tomatillos and jalapenos until smooth, about 15-20 seconds. Heat 1 tablespoon of oil in a large skillet over medium-high heat, then pour in the tomatillo mixture. Stir frequently and cook for about 5 minutes. Add the beef broth, lower the heat, and simmer for 20-30 minutes until the sauce thickens enough to coat the back of a spoon. Transfer the sauce to a serving dish.

In a separate skillet, heat 1 tablespoon of oil over high heat. Add one-third of the marinated beef and sauté for 1 minute. Transfer to the serving dish. Repeat with the remaining beef. While cooking the beef, warm the tortillas in the oven or microwave according to package instructions.

To assemble, stack two tortillas on top of each other. Add your desired amount of beef, top with the tomatillo sauce, and garnish with diced onions, tomatoes, avocado slices, and fresh cilantro. Serve with lemon wedges to squeeze over the tacos just before eating.
