Champagne Shrimp Pasta Delight

8 ounces angel hair pasta

1 tablespoon extra virgin olive oil

1 cup sliced fresh mushrooms

1 pound medium shrimp, peeled and deveined

1 ½ cups champagne

¼ teaspoon salt

2 tablespoons minced shallots

2 plum tomatoes, diced

1 cup heavy cream, divided

salt and pepper to taste

3 tablespoons chopped fresh parsley

freshly grated Parmesan cheese
Instructions
Heat olive oil in a large pan over medium-high heat. Cook the mushrooms in the hot oil, stirring occasionally, until they become tender. Remove the mushrooms from the pan and set them aside.
In the same pan, combine shrimp, champagne, and salt over high heat. Cook until the liquid begins to boil, then remove the shrimp. Add shallots and tomatoes to the champagne, and let it boil until the liquid reduces to half, about 8 minutes. Stir in 3/4 cup of cream and cook for 1-2 minutes until the sauce thickens slightly. Return the shrimp and mushrooms to the pan and heat through. Adjust the seasonings as needed.
Toss the hot, cooked pasta with the remaining 1/4 cup of cream and parsley in a large bowl. To serve, spoon the shrimp and sauce mixture over the pasta and top with grated Parmesan cheese.
