Cheese Ravioli with a Trio of Peppers

3 tablespoons olive oil

1 small onion, diced

1 green bell pepper, thinly sliced

½ red bell pepper, thinly sliced

½ yellow bell pepper, thinly sliced

2 cups chicken broth, divided

¼ teaspoon crushed red pepper flakes
Cooking Instructions

Bring a large pot of salted water to a boil. Cook the ravioli in the boiling water for 8 to 10 minutes or until tender, then drain.

Heat olive oil in a large skillet over medium heat. Sauté the onion and bell peppers until they are soft. Add 1 cup of broth, season with red pepper flakes, and simmer for 5 minutes. Stir in the remaining broth and cook until most of the liquid has evaporated. Spoon the pepper mixture over the ravioli before serving.
