Cheesy Egg Soufflé

Ingredients Needed

16 slices white bread, with crusts trimmed

8 ounces shredded Cheddar cheese

1 ½ cups shredded Swiss cheese, divided

3 cups milk

7 large eggs

½ teaspoon onion powder

½ teaspoon Dijon mustard

3 cups cornflakes cereal

¼ cup margarine, melted
Instructions

Grease a 9x13-inch baking dish with butter. Cut the bread into 1/2-inch cubes.

Layer half of the bread cubes in the bottom of the prepared baking dish. Top with a layer of Cheddar cheese, followed by 1 cup of Swiss cheese. Add the remaining bread cubes on top of the cheese layers.

In a separate bowl, whisk together the milk, eggs, onion powder, and mustard. Pour this mixture over the bread layers. Sprinkle the remaining 1/2 cup of Swiss cheese on top. Cover and refrigerate for 8 hours or overnight.

The next morning, preheat the oven to 375°F (190°C). Place the cornflakes in a bowl and drizzle with melted margarine. Spread the cornflakes evenly over the top of the casserole.

Bake the casserole, covered, for 30 minutes. Then, uncover and continue baking for an additional 15 minutes until golden and bubbly.
