Cheesy Mac and Cheese Muffin Bites

1 ½ cups shredded sharp Cheddar cheese

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray.

In a small bowl, mix the breadcrumbs, olive oil, and salt until well combined; set aside.

Boil a large pot of lightly salted water, then cook the pasta until al dente, about 8 minutes. Drain and return the pasta to the pot.

Add the beaten egg and butter to the cooked pasta, stirring until evenly coated. Then, add the mozzarella, 1 cup of cheddar cheese, and milk, mixing thoroughly. Spoon the mixture into the muffin tin, topping with the remaining cheddar cheese and breadcrumbs.

Bake in the preheated oven for about 30 minutes, or until the topping is golden brown. Let the mac and cheese muffins sit for a few minutes before carefully removing from the tin.
