Chef John's Classic Corned Beef Hash

1 ½ pounds potatoes, peeled and quartered

1 ½ pounds cooked corned beef, finely chopped

1 bunch green onions, chopped

salt and ground black pepper to taste

2 cloves garlic, crushed

1 tablespoon butter

¼ cup roasted tomato salsa
Instructions
Place the potatoes into a large pot and cover with salted water. Bring to a boil, then reduce the heat to medium-low and cook until the potatoes are almost tender but still firm, about 15 minutes. Drain and chop finely.
Cook the beef in a large cast-iron or nonstick skillet over medium heat until the fat starts to render. Stir in the green onions, salt, and pepper. Add garlic and butter, cooking and stirring until the butter melts and the garlic becomes fragrant, about 1 to 2 minutes.
Mix the potatoes, salsa, and a pinch of salt into the beef mixture. Use a spatula to press the mixture down in the skillet, then divide the hash into 4 sections.
Cook, without stirring, until a golden crust forms on the bottom, about 5 minutes. Flip the sections and cook until the crust forms again, about 5 minutes more. Continue flipping every 5 minutes until the hash holds together and forms a golden crust, about 10 to 15 minutes in total.
