Chef John's Classic Swedish Meatballs

¼ teaspoon ground allspice

1 pinch cayenne pepper, or to taste

1 pound ground beef chuck

1 pound ground pork
For the Gravy:

2 tablespoons butter

3 tablespoons all-purpose flour

3 ¼ cups beef broth

½ cup heavy cream

½ teaspoon white sugar

¼ teaspoon Worcestershire sauce

salt and freshly ground black pepper to taste

Instructions
Prepare the Meatballs: Heat butter in a large skillet over medium heat. Add the onions and salt, cooking and stirring until the onions become translucent, about 6 minutes.
Transfer the cooked onions to a large bowl. Add eggs, breadcrumbs, milk, black pepper, nutmeg, allspice, and cayenne pepper. Mix in the ground beef and pork, blending everything together well. Cover the bowl with plastic wrap and refrigerate for 1 hour.
Prepare the Gravy: In a large skillet, melt butter over medium heat. Whisk in flour and cook until it turns golden brown, about 4 to 5 minutes. Gradually whisk in the beef broth. Increase the heat to medium-high, then whisk in the cream and bring to a simmer. Stir in sugar and Worcestershire sauce, and simmer for 6 to 7 minutes until it thickens slightly. Season with salt and black pepper. Remove from heat and set aside.
Preheat your oven to 425°F (220°C). Line a baking sheet with foil and lightly spray it with cooking spray.
Shape 2 to 3 tablespoons of the meatball mixture into a ball using damp hands; continue with the rest of the mixture. Arrange the meatballs on the prepared baking sheet.
Bake in the preheated oven for about 20 minutes, until the meatballs are golden and cooked through. An instant-read thermometer should register at least 160°F (70°C) when inserted into the center.
Transfer the cooked meatballs into the gravy and simmer over medium-low heat until heated through, about 5 minutes.
