Chef John's Hearty Turkey Noodle Casserole

12 ounces egg noodles

3 ½ cups cold milk

1 (10.5 ounce) can condensed cream of mushroom soup

½ cup diced red bell pepper

½ cup diced green bell pepper

¼ cup chopped green onions

1 teaspoon garam masala or curry powder

1 teaspoon dried tarragon

1 cup shredded pepper Jack cheese

1 teaspoon salt, or to taste

3 cups cubed skinless cooked turkey

5 ounces crushed potato chips
Instructions
Preheat your oven to 350°F (175°C).
Bring a large pot of water with a pinch of salt to a boil. Add the egg noodles and cook, stirring occasionally, until they are nearly done but still firm to the bite, about 4 minutes. Drain the noodles.
In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook, stirring, until the mixture turns a light golden color, about 3 minutes.
Slowly add the milk to the butter and flour mixture, whisking continuously. Stir in the cream of mushroom soup, red and green bell peppers, green onions, garam masala, and dried tarragon. Bring the mixture to a simmer and cook for 2 minutes before removing from the heat.
Mix in the pepper Jack cheese, stirring until the cheese melts and combines with the sauce.
In a large bowl, combine the pepper Jack cheese mixture, turkey, and noodles, stirring until evenly mixed. Transfer the mixture into a large casserole dish. Top with crushed chips, pressing them down slightly with a fork. Bake in the preheated oven until the top is golden brown and the sauce is bubbling, about 30 minutes.
