Melt 1 teaspoon of butter in a skillet over medium-high heat. Cook the patties until the bottoms are browned, about 5 minutes. Flip the patties, add green onions, and cook for an additional 4 to 5 minutes until both the patties and onions are browned. Remove the patties and most of the onions to a plate.

Pour the beef stock mixture into the skillet. Stir, scraping up any browned bits from the bottom, and cook until the sauce thickens, about 2 minutes. Lower the heat and set the gravy aside until ready to use.

In a separate skillet, melt the remaining butter over medium heat. Crack the eggs into the skillet and fry them side-by-side until the whites are set and the yolks remain runny.
Divide the rice evenly between two serving bowls. Place the patties on top of the rice, spoon the gravy over the patties, and finish with a fried egg on top.

Chef's Tips
For the best balance of flavors, I suggest using a thin 4-ounce patty—it’s easier to eat and creates a better beef-to-rice-to-gravy ratio.
While a beef patty is traditional, you can also try SPAM, roast pork, or seafood variations for a unique twist on this dish.
