2 green zucchinis, cut into cubes

4 ounces fresh green beans, cut into 1/2-inch pieces

1 ½ cups corn

1 cup frozen baby lima beans, thawed
Cooking Instructions
In a skillet, heat olive oil and butter over medium heat. Add a pinch of salt to the onions and cook, stirring occasionally, until they soften and turn slightly golden, about 6 to 7 minutes. Toss in the red bell pepper, jalapeno, and garlic; continue to cook and stir until the peppers become tender and aromatic, around 3 to 4 minutes.
Mix tomatoes, cumin, black pepper, and cayenne into the onion mixture; cook, stirring, until heated through, about 1 to 3 minutes. Add zucchini, green beans, water, and a pinch of salt; cook until zucchini is nearly tender, about 5 to 6 minutes. Stir in corn and lima beans and cook until heated through, about 3 to 5 minutes more. Season with salt to taste.
