Chef John's Red Wine Braised Cabbage

Ingredients Needed
-
2 tablespoons butter
-
1 small head red cabbage, cored and thinly sliced
-
salt to taste
-
⅓ cup water
-
¼ cup red wine
-
2 tablespoons red wine vinegar, or to taste
-
2 tablespoons white sugar
-
1 pinch caraway seeds
Instructions
In a large skillet, melt butter over medium heat. Add cabbage and cook, stirring, for 1 to 2 minutes until it begins to soften. Season with salt. Pour in water, red wine, and red wine vinegar, stirring to combine. Add sugar and caraway seeds, mixing well.
Continue cooking and stirring until the liquid is fully absorbed and the cabbage becomes tender, which should take about 5 minutes. If the cabbage isn’t soft enough, add a bit of water and cook for a few more minutes.
