Chef John's Traditional Beef Rouladen

2 (6 ounce) (1/4 inch thick) slices of beef round

For the Gravy:

¼ cup all-purpose flour

3 cups beef broth

Instructions
Lay the beef slices flat on a clean surface. Season both sides generously with kosher salt and black pepper. Spread mustard on one side of each slice, then layer with bacon strips and a sprinkle of paprika. Add onion slices across the beef and place 3 pickle slices evenly spaced on each piece. Leave about an inch of the narrow end of the beef slice without toppings to make rolling easier.
Carefully roll each beef slice from the wider end, ensuring all the ingredients stay inside. Keep the rolls tight. Tie each roll with 3 pieces of butcher's twine—one in the middle and one at each end. Trim any excess string.
Heat vegetable oil in a large skillet over medium-high heat. Brown the beef rolls on all sides for about 8 minutes. Remove the beef from the pan. Reduce the heat to medium-low, add butter to the pan, and whisk in the flour. Cook for 1 minute. Slowly pour in cold beef broth and whisk until smooth. Increase the heat to medium-high and bring the sauce to a simmer until it thickens slightly, about 1 minute.
Return the beef rolls to the pan, adding any accumulated juices. Lower the heat to low and cover. Simmer gently, turning the rolls every 20 minutes, until the beef is tender, about 1 1/2 hours. When a sharp knife slides easily into the beef, it's done.
Transfer the beef rolls to a dish to rest. Increase the heat to high and bring the cooking liquid to a simmer. Allow it to thicken slightly to form a gravy, about 1 minute. Serve the rouladen with the gravy.
