Chicken Bolognese
Ingredients Needed

1 tablespoon vegetable oil

3 skinless, boneless chicken breast halves - cut into 1 inch cubes

1 white onion, chopped

2 cloves garlic, finely chopped

1 (28 ounce) can peeled and crushed tomatoes

4 button mushrooms, chopped

½ teaspoon Italian seasoning

½ teaspoon white sugar

4 cups uncooked rotini pasta

¼ cup grated Parmesan cheese for topping
Instructions

Heat oil in a large skillet over medium heat. Sauté chicken, onions, and garlic until the chicken is nearly cooked, around 10 minutes. Add crushed tomatoes, mushrooms, and Italian herbs, cooking for another 5 minutes while stirring often.

Lower the heat, stir in sugar, and let the sauce simmer for at least 15 minutes.

In the meantime, bring a pot of salted water to a boil. Cook the rotini until al dente, about 8 minutes, then drain.

Serve the cooked rotini topped with the chicken sauce mixture and a generous sprinkle of grated Parmesan cheese.
