Chicken Creole

1 tablespoon olive oil

1 clove garlic, minced

1 medium onion, thinly sliced

1 stalk celery, sliced thin

1 medium green bell pepper, minced

2 (14.5 ounce) cans diced tomatoes

1 large bay leaf

½ teaspoon salt

⅛ teaspoon cayenne pepper

4 skinless, boneless chicken breasts
Cooking Instructions

Preheat your oven to 350°F (175°C).

In a large skillet, heat oil over medium heat. Add garlic, onion, celery, and bell pepper. Sauté until vegetables are tender, about 4 minutes. Stir in tomatoes, bay leaf, salt, and cayenne pepper. Continue cooking the sauce for an additional 3 minutes, stirring occasionally.

Place the chicken breasts in a 8x11-inch baking dish and pour the Creole sauce over them.

Bake for 15 to 20 minutes, or until the chicken is fully cooked and white throughout.
