Chicken Scallopini with Lemon Piccata Sauce

20 capers, or to taste

Instructions for Chicken Scallopini
Pour flour into a shallow dish. In a small bowl, combine butter and garlic, mixing until smooth and well blended.
Using a sharp knife, carefully slice each chicken breast horizontally through the thickest part, leaving about 1/2 inch from the thinner edge; be sure not to cut all the way through. Open the breasts like a book, and lay them flat on a work surface. Gently pound them to an even thickness, then coat both sides with flour.
Heat garlic butter in a large skillet over medium heat until the foam subsides. Add the chicken and cook until golden brown, about 6 to 8 minutes per side. Season with salt and pepper, then transfer the chicken to a plate and cover to keep warm.
In the same skillet, sauté the mushrooms in the remaining butter until they begin to brown around the edges, about 5 to 7 minutes. Add wine, demi-glace, lemon juice, and capers. Lower the heat to a simmer, season with salt and pepper, and stir in the parsley.
Plate the chicken, then spoon the sauce over the top. Garnish with fresh lemon slices.
