Chicken Stew in a Pot

4 boneless, skinless chicken breast halves

2 cups fresh sliced mushrooms
Cooking Instructions

In a medium-sized bowl, whisk together the broth, tomato paste, black pepper, oregano, salt, and garlic. Stir thoroughly and set aside.

Coat the chicken in the bread crumbs, ensuring it's evenly covered. Heat oil in a large pan over medium-high heat. Sauté the chicken for about 2 minutes on each side, or until golden brown.

Pour the prepared broth mixture and add mushrooms to the pan. Bring it to a boil, then reduce the heat to low, cover, and let simmer for 20 minutes. Remove the chicken and cover to keep warm.

Increase the heat and bring the broth to a boil once more. Let it cook for 4 minutes, or until it thickens to your liking. Spoon the sauce over the chicken and serve.
