Chinese-Style Chicken Fried Rice

1 ½ pounds cooked, cubed chicken meat

1 large red bell pepper, diced

¾ cup fresh pea pods, halved

½ large green bell pepper, diced

6 cups cooked white rice

2 large eggs, scrambled

⅓ cup soy sauce
Cooking Instructions
Heat sesame oil in a large pan over medium heat. Add the diced onion and cook until tender. Stir in the cooked chicken and soy sauce, and sauté for 5-6 minutes to blend the flavors.
Add carrots, celery, red and green bell peppers, and pea pods; sauté for 5 minutes. Stir in the cooked rice and mix until everything is evenly distributed.
Incorporate scrambled eggs and 1/3 cup of soy sauce; continue cooking until the dish is heated through, then serve immediately.
