½ cup butter

1 large onion, diced

3 stalks celery, diced

½ teaspoon dried thyme

½ teaspoon dried rosemary

1 pinch cayenne pepper, or to taste

2 ¾ cups chicken broth

1 pound saltine crackers, crushed
-
½ cup milk
-
1 egg
Instructions
Preheat the oven to 375°F (190°C). Lightly grease a baking dish with cooking spray.
In a large skillet, melt the butter over medium heat. Add the onion, celery, and 1 teaspoon of salt, cooking and stirring until the onion becomes translucent, about 5 minutes. Stir in black pepper, sage, thyme, rosemary, and cayenne pepper, and cook for another minute.
Take the skillet off the heat and stir in the chicken broth.
In a large bowl, combine the crushed crackers with the onion mixture. Add the egg and cream, stirring until fully mixed. Season with salt and black pepper to taste.
Transfer the cracker mixture into a large baking dish, spreading it out evenly and smoothing the top.
Bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown.
