1 small onion, cut into chunks

1 pound ground lamb

1 tablespoon minced garlic

1 teaspoon dried marjoram

12 tablespoons hummus

12 pita bread rounds

1 small head lettuce, shredded

1 large tomato, sliced

1 large red onion, sliced

6 ounces crumbled feta cheese

24 tablespoons tzatziki sauce
Instructions

Finely chop the onion using a food processor, then transfer it to a cheesecloth and wring out the excess liquid. Place the onion in a large bowl.

Combine the lamb, beef, garlic, oregano, cumin, marjoram, thyme, rosemary, black pepper, and salt with the prepared onion. Use your hands to mix thoroughly. Cover with plastic wrap and refrigerate for about 2 hours to allow the flavors to meld.

Preheat the oven to 325°F (165°C).

Pulse the meat mixture in a food processor for about 1 minute until finely ground and sticky. Pack the mixture into a 7x4-inch loaf pan, ensuring there are no air pockets. Set the loaf pan into a roasting pan and add boiling water around it, filling halfway up the sides to create a water bath.

Bake in the preheated oven for 45 to 60 minutes, or until the center is no longer pink. A thermometer inserted into the center should register at least 165°F (74°C). Discard excess fat and allow the meat to cool slightly.

Thinly slice the cooked gyro meat loaf.

Spread a tablespoon of hummus on each pita bread. Add a portion of the sliced gyro meat, followed by shredded lettuce, tomato slices, red onion rings, crumbled feta cheese, and 2 tablespoons of tzatziki sauce to complete each sandwich.
