Classic Hungarian Goulash

⅓ cup vegetable oil

3 onions, sliced

2 tablespoons Hungarian sweet paprika

3 teaspoons salt, divided

½ teaspoon ground black pepper

3 pounds beef stew meat, cut into 1 1/2 inch cubes

1 ½ cups water

1 (6 ounce) can tomato paste

1 clove garlic, minced
Cooking Instructions
Heat oil in a large pot or Dutch oven over medium heat. Add onions and cook, stirring occasionally, until softened, about 2 to 4 minutes. Set the onions aside once done.
In a medium bowl, mix together paprika, 2 teaspoons of salt, and pepper. Toss the beef cubes in the spice blend, then cook them in the onion-infused pot until browned on all sides.
Add the onions back to the pot with the beef. Stir in water, tomato paste, garlic, and the remaining 1 teaspoon of salt. Bring the mixture to a boil, then lower the heat. Cover and let simmer, stirring occasionally, until the meat is fork-tender, about 1 1/2 to 2 hours.
