Step-by-Step Instructions
Take the rib roast out of the fridge and let it sit at room temperature for about 3 hours, or longer depending on the size of the roast.
Preheat your oven to 425°F (220°C) and line a roasting pan with aluminum foil.
Place the rib roast in the prepared roasting pan and blot it dry with paper towels. In a bowl, whisk together flour, salt, pepper, paprika, onion powder, garlic powder, and celery seed. Coat the roast evenly with the seasoned flour mixture.
Roast the meat in the preheated oven until it reaches your preferred level of doneness, approximately 4 1/2 hours (20 minutes per pound) for medium-rare. For accurate results, use an instant-read thermometer—aim for 120°F (49°C) for medium-rare, 130°F (54°C) for medium, or 140°F (60°C) for well-done.
Cover the roast loosely with aluminum foil. Let it rest in a warm spot on the counter for 30 minutes to 1 hour before carving.
