Cooking Instructions
Place the chicken into a large pot. Add water, onion, and barley, then bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for 1 hour.
Using tongs, transfer the cooked chicken to a cutting board. Remove the skin and bones, then chop the meat into small, bite-sized pieces and return it to the pot.
Add the condensed broth, leeks, celery, parsley, salt, pepper, and thyme. Let the mixture simmer until the vegetables become tender, about 30 minutes.
