Coconut Rice with Black Beans Delight

1 cup uncooked jasmine rice

¾ cup coconut milk

1 pinch ground nutmeg

1 (15 ounce) can black beans, rinsed and drained
Instructions

In a small saucepan, melt the butter over medium heat. Add the shallots and cook until soft and translucent, about 3 minutes. Stir in the rice until it's evenly coated with butter. Add the coconut milk and water, seasoning with a pinch of nutmeg. Bring to a boil, then reduce the heat to medium-low, cover, and simmer until the liquid is absorbed and the rice is cooked, about 18 minutes. Stir in the black beans and cook for a few more minutes until everything is heated through.
