Cordon Bleu Meatloaf

2 pounds extra-lean ground beef

1 cup Italian seasoned bread crumbs

1 small onion, chopped

2 eggs, beaten

⅛ teaspoon garlic powder

1 teaspoon salt

1 teaspoon pepper

4 ounces thinly sliced cooked ham

4 ounces provolone cheese, sliced
Instructions

Preheat your oven to 350°F (175°C).

In a large bowl, combine ground beef, breadcrumbs, eggs, and chopped onion. Season with garlic powder, salt, and pepper. Spread the meat mixture onto a sheet of wax paper and flatten it to about 1/2-inch thickness. Layer the ham slices on top, followed by the cheese slices. Carefully roll the meat mixture into a log using the wax paper, sealing the edges and the seam. Place the loaf in a 9x5-inch loaf pan.

Bake for 1 hour and 15 minutes, or until the meatloaf is fully cooked and no longer pink in the center.
