Cowboy-Inspired Spaghetti

8 ounces spaghetti noodles

1 (10 ounce) can diced tomatoes with green chiles (such as Ro-Tel® Original)

1 (14.5 ounce) can fire roasted tomatoes

1 (4 ounce) can tomato sauce

1/2 cup shredded sharp Cheddar cheese

3 green onions, sliced, or as needed for garnish
Instructions
In a large cast iron skillet, cook the bacon over medium-high heat, turning occasionally, until it becomes slightly crispy, about 7 minutes. Transfer the cooked bacon to a plate lined with paper towels. Once cool enough to handle, crumble the bacon and set it aside.
Add the onion to the skillet with the leftover bacon grease and sauté until softened, about 3 minutes. Stir in the garlic, salt, and pepper, and cook until the garlic is fragrant, about 30 seconds.
Add the ground beef to the skillet. Cook, stirring occasionally, until the beef is browned and crumbly, about 5 minutes. Reduce the heat to medium-low, then stir in the beef broth, Worcestershire sauce, and hot sauce. Mix in half of the crumbled bacon.
Break the spaghetti noodles in half and scatter them over the beef mixture, ensuring they don’t clump together. Pour in the tomatoes with green chiles, fire-roasted tomatoes, and tomato sauce over the noodles. Cover and cook for 20 minutes.
Remove the lid and stir to combine the pasta and sauce. Smooth out the mixture and sprinkle the shredded cheese evenly on top. Top with the remaining bacon and cover again to let the cheese melt, about 5 minutes. Garnish with chopped green onions and serve right away.
