Creamy Parmesan and Black Pepper Arborio Rice Pilaf
Ingredients

1 tablespoon butter

1 tablespoon olive oil

1 small onion, finely chopped

2 cups arborio rice, rinsed in a colander until water runs clear

1 quart low-sodium chicken broth

¾ cup grated Parmesan cheese

1 teaspoon coarsely ground pepper

Salt, to taste
Directions

In a large saucepan, heat butter and oil over medium-high heat. Add onion and cook until softened, about 3 to 4 minutes. Stir in rice, coating it well. (You can turn off the heat and let it sit for several hours if needed.)

Pour in the broth, cover, and bring to a simmer. Reduce heat to low and cook, stirring occasionally, until the liquid is absorbed and the rice is creamy with a slight firmness in the center, about 12 minutes. Stir in Parmesan cheese and black pepper; add salt to taste. Serve immediately.
