Creamy Salmon Mac and Cheese
Ingredients Needed

1 (16 ounce) package elbow macaroni

¼ cup butter, softened

1 tablespoon olive oil

1 small onion, minced

1 (6 ounce) can salmon, drained and flaked

1 tablespoon seafood seasoning (such as Old Bay®)

1 tablespoon red wine vinegar

2 ½ cups shredded Cheddar cheese

2 eggs, beaten
-
2 cups milk
-
½ cup vegetable stock
-
1 (14.5 ounce) can peas and carrots, drained

1 (8 ounce) can whole kernel corn, drained

salt and pepper to taste

3 slices day-old bread
-
3 tablespoons grated Parmesan cheese
Instructions

Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Bring a large pot of lightly salted water to a boil over high heat. Add the macaroni once the water is boiling, and cook uncovered, stirring occasionally, until the pasta is al dente, about 8 minutes. Drain in a colander and transfer to a large bowl. Mix the butter into the pasta.

In a skillet, heat the olive oil over medium heat and cook the onion until browned, about 5 minutes. Add the salmon and seafood seasoning, cooking for an additional 5 minutes until heated through. Remove from heat and stir in the red wine vinegar. Let the mixture cool.

In a large mixing bowl, combine the Cheddar cheese, eggs, milk, and vegetable stock. Add the salmon mixture, peas, carrots, and corn. Mix well, then fold in the macaroni. Season with salt and pepper, then transfer to the prepared baking dish.

Toast the bread and break it into small pieces. Process the toasted bread and Parmesan cheese in a food processor until crumbly. Sprinkle the crumbs over the top of the casserole.

Bake for 45 minutes, or until heated through. Let it cool for 15-20 minutes before serving.
